October was a momentous time for the Chinese Sherry Association as we held the first ever Advanced Sherry Certification event. Over three days Cesar Saldana, the Director General of the Consejo Regulador of Jerez-Xeres-Sherry DO. presented detailed information on the winemaking and wine culture of Jerez to a packed room of attendees from all over China. Wine experts and writers from Taiwan and Hong Kong also attended this event. At the end of the program and after a written test and blind tasting the attendees who passed the tests were awarded the prestigious Advance Sherry Certification which for the first time in History was printed in both Spanish and Chinese. I wish to convey my most sincere appreciation to Cesar Saldana for traveling so far and working so hard to build the presence and appreciation of Sherry in China. As we look to the future, I am proud that we have 40 new Sherry ambassadors in China!

| Sherry News Farewell event to recognise Ricardo Rebuelta's 21-year contribution as Secretary General of the Consejo Regulador for Jerez Brandy |

Ricardo Rebuelta has finally said goodbye to more than twenty years as Secretary General of the Consejo Regulador for Jerez Brandy. To recognise his extraordinary commitment and contribution to the Consejo for Jerez Brandy, a special lunch in Rebuelta's honour was held recently at the Bodega San Ginés. The event was attended by numerous friends and professionals from a range of sectors and from the wine industry in particular. During his speech, the President of the Consejo, Evaristo Babé, highlighted Rebuelta's "human and professional quality", thanking him for his outstanding work and dedication to the spirit produced in Jerez. Rebuelta expressed his gratefulness to the people attending the event, and to all the collaborators who have worked closely with him over the past 20 years. The Director General for Sherry, César Saldaña will also assume the position of Director General of the Consejo Regulador for Jerez Brandy. His appointment completes an internal restructuring process started a year ago to combine efforts and optimise synergies between the two regulatory bodies.

| Featured Events 2010 Official Sherry Advanced Certificate Program in Shanghai | |

Co-organized by Consejo Regulador of Jerez-Xèrés-Sherry DO and the Chinese Sherry Association, 2010 Official Sherry Advanced Certificate Program was held at Chateau 599 in Shanghai from October 26 to October 28, awarding the prestigious Sherry Advanced Certificate for the first-ever time in China.
F&B Professionals, sommeliers and wine writers from all over China were invited to the seminar, which was presented by César Saldaña Sánchez, Director General of the Consejo Regulador of Jerez-Xeres-Sherry DO.
Having advocated the Sherry Advanced Certificate Program, John H. Isacs, CEO of EnjoyGourmet Digital & Print Media, also arranged excellent food and Sherries for lunch, dinner and an afternoon tea. At the end of the seminar, the Sherry Advanced Certificates were awarded to qualified attendees who passed the written exam and the blind tasting. In total 40 attendees passed the exam and were awarded the prestigious certificate.

| Sherry Recipe Kidneys in Sherry | |
| |
| Ingredients: |
| 1/2 kg of pig's kidneys |
| 1 small onion, chopped |
| 1 garlic clove |
| 1 tablespoon of flour |
| 1/2 tablespoon of sweet paprika |
| 6 tablespoons of olive oil |
| 1/2 cup of water |
| 1/2 sherry glass of ALFONSO Oloroso |
| Salt |
| Parsley |

| Instructions: |
Clean and slice the kidneys, and place them on an upside-down saucepan lid. Fill the saucepan two-fingers deep with water, place the lid with kidneys on top and heat on hob. Sprinkle kidneys with salt and leave heating for 10 minutes until their liquid is released.
Put the kidneys in a colander and wash well under the cold water tap. Then put the oil and onion in a saucepan to heat. When the onion becomes transparent, add the kidneys and keep stirring. After 5 minutes sprinkle the kidneys with the flour and paprika, stir again, and then quickly add the half-cup of water and the crushed garlic and parsley. Leave to cook for another 5 minutes and, just before serving, add the ALFONSO.
