| Sherry had a wonderful year in 2010 with two successful seminars in Taipei and Shanghai and our first ever 3-day Sherry Advanced Certificate event in Shanghai. For three days Cesar Saldana captivated an audience of attendees from all over China, Hong Kong and Taiwan. On the final day 40 people from wine importers, wholesalers, retailers, educators and media were awarded the prestigious Sherry certificate, the first time ever the certificate has been in both Chinese and Spanish. I congratulate the new Sherry trainers and look forward to working with all of them to further the interests of Sherry in China as we look forward to even greater progress in 2011. |

During this time of year the bodegas of the Jerez wine producing region enjoy one of their busiest periods for Sherry consumption both in Spain and abroad. If Sherry and Manzanilla are particularly popular during springtime in Spain, during the Christmas period there are no real geographical differences. Be it in Spain or abroad, it is at this time of year that Sherry enjoys a peak period of sales and consumption. During this traditional season, Sherry, a quintessentially modern classic, continues to be an irreplaceable drink of choice for every occasion, particularly in the Anglo Saxon countries, but also here in Spain as well. Father Christmas finding a glass or two of sweet Sherry next to the chimney in Britain, or a glass of a good Oloroso in Jerez, are both intrinsic symbols of our wines and their fundamental role in the seasonal family celebrations. Sherry is the drink par excellence for these celebrations, a wine to share with family and friends, but apart from the traditional presence of the sweet or semi-sweet varieties (Cream, Pale Cream, Medium) in all the countries of the old British Commonwealth, the efforts made over recent years to introduce to these markets the drier types of Sherry (such as the Fino or Amontillado) and their ideal combination with a whole range of dishes, give our wines pride of place at the meal table during the festivities. Fino and Manzanilla with the seafood which is traditionally eaten in Spain during the Christmas period or Amontillado for soups and consommés, white meats such as the traditional turkey, as well as blue fish, and semi-cured cheeses. A Medium Dry, lightly chilled, combines perfectly with pâtés, whereas Oloroso is the perfect wine for game or other traditional red meats such as lamb, as well as cured cheeses. A Cream, of course, is the Sherry to accompany typical Christmas sweets (turrones, polvorones and marzipans). Finally, a Pedro Ximénez, the most delicate and elegant of after dinner wines, makes the perfect finishing touch for any kind of Christmas meal. Sherry is therefore the perfect wine to enjoy at Christmas time, and as such it is increasingly becoming the ideal gift. Wines with a Certified Age of 20 and 30 years, Wines with an Indication of Age of 12 and 15 years and Gran Reserva Jerez Vinegar, make wonderful presents. The bodegas have prepared products in special packaging to meet the demand for quality gastronomic goods either for friends and family, or in the typical hampers or gift sets which are given to employees or favoured clients at this special time of the year. |

| Featured Events Certificate Program by ISG and WSET | |

The International Sommelier Guild (ISG) and the Wine & Spirits Education Trust (WEST) have held several certificate programs in Taiwan, attracting many wine lovers and wine salespersons to participate in the program. The participants were guided to study oenology and learn how to serve wine as well as pair wine with food. After passing the examination, each of them was granted an international certificate. The instructor Nassem indicated that Sherry wine was a key section in the program. The exceptional terroir in Jerez, the winemaking process of fortification to cease fermentation and the Solera aging system all contribute uniquely wonderful flavor to Sherry wine. If one knows little about Sherry, one knows little about wine. One of the most versatile Sherries to pair with Chinese cuisine, the slight sweetness and generous fruity and nutty flavors of Medium Sherry make it a good match with many Chinese dishes, including slightly spicy ones. |

Rum Raisin Ice Cream-tini
Ingredients:
1 oz Rum
0.75 oz Sweet Sherry
0.5 oz White Cacao Liqueur
1 oz Cream
Instructions: Mix all the ingredients with ice, gently shake well and strain the ice, garnish with the raisins which dipped in sweet Sherry for about two minutes and serve. |

Ingredients:
1 oz Light Rum
0.5 oz Dark Rum
0.5 oz Sweet Sherry
0.5 oz Lime Cordial
Instructions: Mix all the ingredients then add ice and shake well and serve. |

| Sherry Recipe River Crabs in Sauce | |

Ingredients:
1/2 kg of freshwater crabs
1 medium-size onion, chopped
1 garlic clove, chopped
1 sherry glass of TIO PEPE
1 tablespoon of hot paprika
1 cup of purée of fried tomato
5 tablespoons of olive oil
Salt and pepper
Chopped parsley

| Instructions: |
Heat the oil in a saucepan and sauté the onion and garlic.
Add the paprika, stir for a bit, then pour in the tomato purée and TIO PEPE.
Leave cooking for a few minutes, stirring, until the sauce is good and hot.
Add the crabs, prefer in pieces. Cover the pan and leave to cook on a low heat for 8-10 minutes.
