葡萄酒字彙 GLOSSARY ◆ (A~D)

ACID(酸度)
葡萄酒都有天然的酸度,白酒要比紅酒高一些。酸度是白酒結構品質上的重要因素。
all wines have a certain amount of natural acidity, with white wines generally having more acid than red wines. In white wines the acid flavor of the wine is essential to its quality.

ALCOHOL(酒精)
所有的葡萄酒均含有酒精(一般約在5%~14%之間)但絕不可以強壓過其它的味道。也就是說,酒精必需與其它的口感平衡。如果酒質不佳,酒精會顯得過於淡薄或濃烈。尤其是飲用紅酒溫度過高時,酒精會變的粗糙刺激。
all wines have alcohol a percentage of alcohol (commonly from 5% to over 14%), but it shouldn't overpower the other features of the wine. In other words, the alcohol taste should be balanced with other taste sensations. If a wine is poor quality the alcohol may be too subdued or too aggressive. Red wine served too hot will exhibit an excessive alcohol flavor.

AROMA(香味)
指葡萄酒聞起來的味道。
means the smell or bouquet of a wine.

BODY(酒體)
形容葡萄酒的稠度、飽滿度。若酒體厚實,則口感濃郁而果味豐沛,也會有清楚可見的淚腳。
a term to describe the fullness of a wine. A wine with a big body will be very full in the mouth, usually with plenty of flavor, and have well developed legs.

BOUQUET(香味)
描述葡萄酒的芳香,通常指較複雜多層次的香味,不同於一般單調的葡萄香味。
describes the smell or fragrance of a wine. The term bouquet is often used to specifically denote a complex smell, rather than a simple grapelike smell.

BUTTER/BUTTERY(奶油味)
經常用來形容白酒、氣泡酒在口感上有奶油的味道。新世界產區的夏多內在香味與口感上就經常有厚重的奶油味。
is a term commonly used to describe the smell, taste or texture sensation of butter in white wines and some sparkling wines. New World Chardonnays often have plenty of butter sensations to the nose and palate.

COMPLEX/COMPLEXITY(複雜度)
這是非常重要的形容詞,表示葡萄酒擁有多種以上的風味與特質(通常是讚美詞)。好酒經過窖藏陳年後即具有複雜度。
an important term used to describe a wine that has a number of discernable characteristics (usually positive ones), rather than one or two. Good wines that have aged well will develop into complex wines.

CORKED(變質)
通常因軟木塞的品質不良而導致酒質變壞。味道類似潮濕的舊報紙或舊紙版。變質的酒應該退回或是不要飲用。
a term used to describe a wine that has gone bad because of a faulty cork. A corked wine will have a bad smell, something like old wet paper or cardboard. A corked wine should be sent back or rejected.

DRY(不甜)
形容酒不甜。
used to describe a wine that is not sweet.
